Temperament and a recipe for Tortilla Soup

One thing about it.  We are creatures of temperament.  We awaken each morning and sometimes feel on top of it all and then other times, not so much.  Could have been something that happened last year, this month, yesterday, or today. Sometimes those emotions creep up on us unaware and at times, when we are stressed, out of sorts, and say something we didn’t mean to say, we must walk back our words with an apology.  Then there are times when we are sick or just don’t feel well and snap at anyone passing by, including the cat.

Abraham Lincoln once said, “We are about as happy as we make up our minds to be.”  A lot of truth in those words, but they very hard to achieve.  However, if we refocus our thinking along that line and show graciousness to others, even on those days when we don’t exactly feel up to it, we will find our attitude changing.

Is anyone up for some soup, especially now when the weather is much cooler, curl up on your couch to eat and watch a favorite movie.  “It’s a Wonderful Life” is a great choice, with Christmas just around the corner.  Yep, that’s the kind of movie to watch when you have the sniffles.  Poor old George Baily.  He is the epitome of how we all feel at times.  If this movie doesn’t give you hope and heart and belief in God and our fellow Christians and neighbors, then nothing will.

Tortilla Soup

Place in a slow cooker, one whole chicken.  Skin included.

Season to your liking.  I prefer salt, parsley, olive oil and a bit of garlic powder.

One medium diced onion.

Cook on low heat for about 10 hours.

Debone

And by all means save the juices from the chicken to place in your bowl.

Top with tortilla chips, a bit of lime juice and mozzarella cheese.  Whatever suits your fancy.

 

This will warm your heart and help those sniffles.  Grandma said it would.  Enjoy the movie.
